Healthy Chili Pasta Bake Recipe!

I love chili. I love pasta. I love food in general. I'm always seeing recipes that I want to try but the problem with anything that taste good, is that it's probably bad for you. I found this chili pasta bake recipe and decided to tweak it and make a healthy version!

You'll Need:


  • 1/2 Tablespoons Vegetable Oil (I prefer Olive or Coconut Oil!) 
  • 1 whole Onion, diced 
  • 1 pound extra lean ground turkey 
  • a dash of salt 
  • black pepper to taste 
  • 8 oz whole wheat pasta ( I like rotini)
  • 15 oz tomato sauce (I used no salt added)
  • 1 can(14 1/2 oz diced tomatoes & green chilies)
  • 1 can(15 oz black beans)
  • 1 zuchinni, cut into small pieces 
  • 1 can corn, rinsed 
  • 1 1/2 tablespoons chili powder ( I used more, my family likes spicy!)
  • 2 teaspoons Cumin 
  • Cayenne Powder to taste (usually 2-4 dashes depending on how spicy you want it)
  • 1/4 cups water 
  • 2 cups weight watchers mexican blend cheese 
  • 1/2 cups fat free sour cream (optional - for topping)
  • 4 tablespoons green onions, chopped 
Cooking:

-Preheat oven to 350 degrees-

Put oil into a large skillet over medium-high heat. Add the onions and zucchini, cook for a few minutes. Add extra lean ground turkey and season with salt and black pepper to your liking. Cook until no longer pink.

While your meat is cooking, cook your pasta according to the package directions. Once cooked, drain out the water and set aside.

Once the meat is no longer pink, add your tomato sauce, tomatoes and green chilies, corn and all of your spices. Stir occasionally, simmering for 5 minutes or so.

Add your cooked pasta, stir to combine ingredients.

Pour the mixture into a large glass baking dish. I used 9 x 13. Flatten out with a spatula and sprinkle with cheese! Cook for about 30 minutes until cheese is nice and bubbly. Once its done cooking you can add fat-free sour cream and green onions!

There is my healthy version of a chili pasta bake. It's filling & not so bad for me! Serve with some salad and garlic bread for a full meal :)
